Spinach and Cheese Folded Omelette

Spinach and Eggs along with cheese makes a great breakfast…

Lately, I’ve been into eating a really good breakfast. Thanks to my man for constantly inspiring and encouraging me to do so. He’s a big breakfast person. I am already experiencing some good changes in my body and mind. It’s not a piece of new information that breakfast should be eaten like a king. After 7 hours of sleep, obviously our body needs the fuel to jump start it. The first thing that should be consumed after waking up is not coffee nor tea or soda but just pure water. In fact, the more water you drink the better. Also, drinking lots of water after you wake up helps in dumping your waste easily and makes your body feel great. After a shower and freshening up, having a good breakfast should be your next goal. Once your body gets what it needs, it would cooperate well with your mind and you are all set to kick off your day beautifully. You wouldn’t be distracted by the thought of eating nor tempted by any snacks for a very long time.

Skipping breakfast would lead to overeating and frequent snacking later in the day. Why? Because you are hungry and you just want to fill up your stomach with everything you see. Again, don’t take advantage of the saying ‘eat breakfast like a king’ by eating whatever you can get hold of. Eating pastries, chocolates, and ice creams are big No’s. Don’t load your body with sugar in the morning. Try to make it as healthy as possible by having eggs that have all the protein you need, milk, banana, fruits, nuts, homemade smoothies, etc. It’s good to add variety to your breakfast, don’t stick to the same dishes every day. You’ll be bored with it and would be tempted to hit the breakfast bar in your office cafeteria or some fast food place. Once or twice a week, have pancakes, cereals, waffles etc. And on weekends, don’t forget to treat yourself with a heavy brunch including your favorite dishes.

I am purely a slave for 2 minutes microwaved eggs and veggies or trail mix omelette. I add egg yolks only twice a week or so, other days I make it with just egg whites. Also, I love to make my own smoothie by adding different kinds of fruit, yogurt, milk, honey, etc. Another combination that I adore is eggs, spinach, and cheese. Making omelette in the microwave helps to avoid adding oil and saves time too. Well, if you are used to having pan-fried omelette, then it might take a while to get used to the taste of microwaved omelette. So, somedays just to enjoy the real taste of omelette I would make it in a pan, add some cheese and for a healthy touch spinach is added to it. This is my yet another favorite breakfast dish.

Spinach and Cheese Folded Omelette

Serves: 1 person

Ingredients

  • Eggs- 2
  • Spinach, chopped- 1/4 cup
  • Milk or cream- 2 tbsp
  • Ground pepper- 2 pinches
  • Salt- a few pinches
  • Cheddar cheese, grated- 1/4 cup
  • Butter or non-stick cooking spray or olive oil

Instruction

  • In a small bowl, beat eggs, spinach, milk, ground pepper and salt using a whisk.
  • Place a non-stick pan over medium heat.
  • Spray with non-stick cooking spray or butter or olive oil.
  • Pour the beaten eggs over the pan, let cook for 3 minutes.
  • Sprinkle cheese over the omelette and cook for 2 minutes.
  • Once the cheese starts to melt, fold the omelette using a spatula.
  • Gently flip it to the other side and cook over low heat for a couple more minutes.
  • Slide the omelette to a plate and serve with toasted bread or bagels.

Tips:

  • For a healthier version, use only egg whites.
