Shrimp Rice Noodles

Shrimp, noodles and Asian flavors, makes me hungry…

12.12.12! The world didn’t end, we are all alive and kicking. Honestly, I don’t think this world is going to crash anytime soon, there is a lot more to happen. On the other hand, I am not sure how long am I going to live and I don’t want to think about that as this specific thought always chills me to the bone.

It’s been a very stressful time for me even though it’s the most beautiful time of the year. Having a tug-of-war between reality and illusion. At times, it feels good to have challenges in life which makes life more exciting. I’ve realized one thing, only those who overcome the trouble without losing hope will survive and reach their destination. Isn’t that “life of Pi ” is all about? Wow, what an amazing movie! It’s truly a visual and emotional treat.

I’ve a lot of recipes to post yet I am not able to blog. I need to have a clear mind to blog, that’s what is missing these days, a clear mind! Anyway, today I am forcing myself to blog and to overcome the block.

Here’s one of my favorite ways to make noodles. I love to add shrimp rather than chicken, shrimp noodles tastes better than chicken noodles. I seldom buy instant noodles and I absolutely dislike the seasoning that comes with instant noodles. Making a delicious noodle dish is not that hard, with a few ingredients we can whip up a great tasting noodles.

Shrimp Noodles

Ingredients

  • Rice Noodles
  • Shrimp, devined and shelled- 15
  • Oil- 2 tbsp
  • Onion, diced-1
  • Green pepper, diced-1
  • Red pepper, diced-1
  • Celery, diced- 3 stalks
  • Lemon grass, white part sliced- 4 slices
  • Basil leaves- 8
  • Soy sauce- 3 tbsp
  • Oyster sauce- 2 tbsp
  • Chili paste- 1 tsp
  • Roasted red pepper paste ( Thai Kitchen, optional)- 1 tsp
  • Ground pepper- 1 tsp
  • Sesame oil- 1 tbsp
  • Green onion, chopped- 1 stalk
  • Cilantro, chopped- 2 handful

Instruction

  • Cook the rice noodles in boiling water till it’s cooked well, rinse it under cold water, drizzle sesame oil over the noodles and keep aside.
  • Place a large wok or non-stick pan ove medium heat.
  • Add oil, add onions, green pepper, red pepper and celery.
  • Stir fry till the veggies turn slight tender but still crispy.
  • Add lemon grass and basil leaves, cook for a minute.
  • Add shrimp and cook for a few minutes.
  • Now, add soy sauce, oyster sauce, chili paste, roasted red pepper and ground pepper.
  • Combine well and stir fry for a few minutes.
  • Add the cooked noodles rinsed under cold water and drizzled with sesame oil.
  • Stir fry for a couple of minutes.
  • Add cilantro and green onions, cook for a few seconds.
  • Serve on a plate and enjoy.
  • If you want you can discard the lemon grass before serving.

Tips:

  • Use chow mein instead of rice noodles.
  • Add chicken instead of shrimp.
