Chia Seeds- Vermicelli Healthy Falooda- Easy Ramadan Dessert

 

Chia seeds & sweetened vermicelli layered and made into a delicious & healthy dessert…

This is a healthy version of Falooda. Chia seeds are rich in omega 3 fatty acids, soaked in coconut milk. Thin roasted vermicelli cooked along with milk & condensed milk. Layer them in a tall glass & topped with Rooh Afza-rose syrup, mixed fruits & nuts. Truly yum & an easy-to-make dessert.

Ingredients
  • Chia seeds- 2 tbsp
  • Coconut milk, thick- ½ cup
  • Water- ¼ cup
  • Thin vermicelli- 1 cup, roasted
  • Milk- 1½ cups
  • Condensed milk- 2 tbsp
  • Ground cardamom- ¼ tsp (Optional)
  • Rooh Afza or Rose syrup or Maple syrup- 2 tbsp
  • Candied dried fruits or Tutti Frutti- 1 tbsp
  • Mixed Fruits
  • Chopped Nuts
  • Cherries
Instructions
  1. In a bowl, combine chia seeds along with coconut milk & water. (I've used thick coconut milk ½ cup, hence added ¼ cup water to thin it down).
  2. Instead of coconut milk, you can also add milk or water.
  3. Soak the chia seeds in coconut milk overnight.
  4. The next morning, chia seeds will plump up & will be soaked well.
  5. Place a saucepan over medium heat, add 1½ cups milk.
  6. Add 1 cup thin roasted vermicelli (roughly broken).
  7. Add condensed milk, combine well.
  8. Add ground cardamom, this is optional. Or add a few strands of saffron.
  9. Cook for 5 minutes till vermicelli has turned soft.
  10. Remove the pan from the heat, let cool down.
  11. Into a tall glass, first, add 2 tbsp chia seeds.
  12. Top with 3 tbsp sweetened vermicelli.
  13. Pour 1 tbsp roof afza or rose syrup or maple syrup or honey.
  14. Top with candied dried nuts, more chia seeds, mixed fruits & nuts.
  15. Top with 2 cherries and finally drizzle 1 tbsp rooh afza or rose syrup or maple syrup or honey.
  16. Enjoy, this can be chilled and will taste even more delicious.
  17. This recipe will make 2 servings, for making more increase the amount of ingredients accordingly.
Notes
Thin roasted vermicelli is available at Indian & Middle Eastern stores. Or you can add thick 2 inch slice vermicelli.
