This is totally my kind of recipe, easy to make & tastes incredible. Pureed spinach will impart a vibrant green color to this curry, and the fresh cream will make it rich & creamy. Can be served with rice, pasta, chapati, naan, etc.

Ingredients
  • Oil- 1 tbsp
  • Cumin seeds- 1 tsp
  • Ginger, chopped- ½ tbsp
  • Garlic, chopped- ½ tbsp
  • Onion, chopped- 2
  • Green chilies, chopped- 2 to 4
  • Tomato, chopped- 1
  • Chicken, boneless diced- 2 breasts or thighs
  • Turmeric powder- ¼ tsp
  • Coriander powder- 2 tsp
  • Cumin powder- 1 tsp
  • Garam masala- ½ tsp
  • Salt- 1 to 1½ tsp
  • Fresh spinach leaves- 2 cups
  • Water- ½ cup (to puree spinach)
  • Fresh cream- ¼ cup
  • Cilantro, chopped- ¼ cup
Instructions
  1. Select Saute setting on the Instant Pot. The temperature should be medium.
  2. Let the stainless steel pot turn hot.
  3. Add oil, cumin seeds; saute for a few seconds.
  4. Add ginger & garlic, saute for a few seconds.
  5. Add onions, green chilies, and season with salt.
  6. Add tomato, combine well.
  7. Add the diced chicken, combine well.
  8. Add all the spices- turmeric, coriander, cumin & garam masala. Combine well.
  9. Close the pot with the lid.
  10. Cancel Saute. Select Pressure Cook, set time to 5 minutes at high pressure.
  11. After 5 minutes of pressure cooking, do a quick pressure release.
  12. Open the lid.
  13. Perfectly cooked chicken with the gravy.
  14. To a blender jar, add fresh spinach leaves & ½ cup water, puree till smooth.
  15. Add the pureed spinach to the cooked chicken, combine well.
  16. Select Saute setting at medium temperature.
  17. Cook for 2 to 3 minutes.
  18. Taste & add salt according to your needs. If you want this curry to be spicy add ground black pepper.
  19. Add fresh cream, combine well.
  20. Garnish with chopped cilantro.
  21. Remove the stainless steel pot from the main pot. Keep it covered for some time.
  22. Serve into a bowl, enjoy with rice, chapati, roti, or naan.
