Lemon Sesame Chicken Noodles

Making this dish can’t get anymore easier: it’s flavorful, loaded with sesame chicken and absolutely delish. Sesame battered fried chicken and lemon added to the sauce gives this dish a nutty and slightly tangy flavor. Add hakka noodles or vermicelli noodles to the chicken and sauce, stir fry and a complete meal is ready in very less time.

Ingredients
For marinating chicken
  • Chicken breasts or thighs, cut into thin strips- 2 breasts or thighs
  • Ginger, grated- 2 inch slice
  • Garlic, grated- 1, large clove
  • Soy sauce- 1 tbsp
  • Chili paste or sambal oelek- 1 tsp
  • Rice vinegar- ½ tbsp
  • Hoisin sauce- 1 tbsp (optional)
  • Egg, beaten- 1
  • Corn starch- ½ cup
  • Toasted sesame seeds- 2 tbsp
For making sauce
  • Oil, used for frying chicken- 1 tbsp
  • Spring onions, chopped small- 1 stalk
  • Garlic, minced- 1
  • Ginger, minced- 1 inch slice
  • Chicken stock, low sodium- ½ cup
  • Soy sauce, low-sodium- ½ tbsp
  • Lemon juice- 1½ tbsp
  • Corn starch- 1 tbsp dissolved in 1 tbsp cold water
  • Sesame oil- 1 tsp
  • Vermicelli or Hakka noodles
  • Oil- enough for deep frying chicken
Instructions
  1. Cut the chicken into thin strips, you could use either chicken breast or thighs.
  2. In a bowl combine all the ingredients mentioned above "for marinating chicken". Keep aside for 15 minutes or longer.
  3. Deep fry the marinated chicken strips in oil. Transfer to a kitchen paper towel and keep aside.
  4. Soak vermicelli or hakka noodles in hot water for 5 to 10 minutes till it turns tender. Drain water, drizzle 1 tbsp oil over the cooked noodles and keep aside.
  5. Place a wok over medium heat, add 1 tbsp oil used for frying chicken.
  6. Add spring onions, saute for a minute.
  7. Add garlic and ginger, saute till it turns light golden color.
  8. Add chicken stock, combine well.
  9. Add soy sauce and lemon juice to the chicken stock, combine well.
  10. Dissolve cornstarch in cold water, add that to the sauce and combine well without any lumps.
  11. The sauce will start to thicken.
  12. Add the fried chicken strips to the sauce, mix well.
  13. Add the cooked vermicelli or hakka noodles to the wok.
  14. Stir fry at high heat till everything has combined well.
  15. Drizzle sesame oil over it, combine well.
  16. Remove from heat and serve into a plate.
  17. Garnish with chopped spring onions.
  18. Enjoy the nutty, tangy and flavorful chicken noodles.
Notes
Fried chicken strips itself tastes delicious, it can be served as an appetizer, you can dip the chicken strips in your favorite sauce.
