I swear this is better than restaurant style & has turned into one of my favorite noodle stir fry.

Ingredients
For marinating shrimp
  • Shrimp, deveined & shelled- 20 (or use scallops)
  • Light soy sauce- 1 tbsp
  • Hoisin sauce- ½ tbsp
  • Sesame oil- 1 tbsp, while cooking shrimp
For making noodle stir fry
  • Sesame oil- 1 tbsp
  • Garlic, sliced thin- 2 cloves
  • Ginger, sliced thin- 2-inch slice
  • Green onions, chopped- 1 stalk
  • Mixed veggies- 2 cups (carrots, green pepper, broccoli, green beans, peas, mushroom, etc)
  • Sambal oelek or chili paste or sauce- 1 tsp
  • Light soy sauce- 2 tbsp
  • Oyster sauce- 1½ tbsp
  • Hoisin sauce- 2 tbsp
  • Dark soy sauce- 1 tsp
  • Udon noodles- 3 packs (600g)
  • Water- ¼ cup
  • Cilantro, chopped- ¼ cup
  • Sesame seeds- 1 tbsp
  • Sesame oil- 1 tsp
Instructions
  1. In a bowl, combine shrimp with soy sauce & hoisin sauce. Instead of shrimp baby scallops can also be used.
  2. Place a wok over medium heat, add 1 tbsp sesame oil & add the shrimp.
  3. Cook till the liquid has dried off & shrimp turns light golden brown in color.
  4. Keep aside the shrimp.
  5. To the same wok, add 1 tbsp sesame oil.
  6. Add the sliced garlic & ginger, saute till golden in color.
  7. Add green onions, saute for a minute.
  8. Add the mixed veggies & cook till veggies turn slightly soft, don't overcook the veggies.
  9. Stir fry over high heat for 3 minutes.
  10. Add sambal oeloek, 1 tbsp soy sauce & 1½ tbsp oyster sauce, combine well.
  11. Stir fry for 2 minutes.
  12. Add the cooked shrimp & combine well.
  13. Add the udon noodles, combine well.
  14. Add ¼ cup water & cook covered for 3 minutes.
  15. Add 1 tbsp soy sauce, 2 tbsp hoisin sauce & 1 tsp dark soy sauce, stir fry for 2 minutes.
  16. Don't add more than a tsp of dark soy sauce, it has an intense taste that will make the noodles brown in color.
  17. Stir fry over high heat for 3 minutes.
  18. Add chopped cilantro, sesame seeds & 1 tsp sesame oil, stir fry for a minute.
  19. Serve on a plate & enjoy this flavorful & absolutely delicious shrimp udon noodle stir fry.
