Instant Pot Roasted Tomatoes & Red lentil Soup | 20 Minute Easy Recipe

Comforting & delicious soup…

Easy to make & satisfying soup made in the Instant Pot, ready in just 20 minutes. Fresh tomatoes from my veggie garden turned into this soup. Roasted tomatoes are great for making soups, along with red lentil it will be a hearty soup packed with natural flavors.

Ingredients
  • Tomatoes, halved- 8 Roma tomatoes
  • Green pepper- ½ of a pepper
  • Green onions- 2 stalks
  • Garlic- 3 cloves
  • Red lentil, rinsed- 1 cup
  • Chili powder- ½ tsp
  • Ground cumin- 1 tsp
  • Paprika- 1 tsp
  • Ground black pepper- ⅛ tsp
  • Salt- ½ tsp
  • Chicken stock- 2 cups
  • Water- 2 cups
Instructions
  1. I've made this soup in the Instant Pot.
  2. For roasting the tomatoes & veggies, I've used my Instant Pot duo crisp & air fryer.
  3. Place the stainless steel pot into the main pot.
  4. Place the air fryer basket & the broil tray.
  5. Place a thin pan on the broil tray. Or line the tray with parchment paper.
  6. Place the tomatoes, green onions, green pepper & garlic.
  7. Close the pot with the air fryer lid.
  8. Select roast setting, set time to 15 minutes, temperature 400 F or 200 C.
  9. If you don't have an Instant Pot, roast in an oven at 400 F for 15 minutes.
  10. After roasting the veggies, let's pressure cook them with red lentil.
  11. Add all the roasted veggies to the stainless steel pot.
  12. Add 1 cup red lentil,.
  13. Add all the spices.
  14. Add chicken stock & water or add 4 cups of chicken stock. Combine well.
  15. Close the pot with the lid.
  16. Select pressure cook, set time to 3 minutes at high pressure.
  17. After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
  18. Open the lid, red lentils will be mashed up.
  19. Let's puree the soup, I've used an immersion hand blender to puree the soup.
  20. Or transfer the soup to a blender jar & puree.
  21. Serve in a soup bowl, drizzle ½ tbsp cream, this is optional.
  22. Enjoy this comforting & delicious soup with croutons or butter toast.
