Ingredients
  • Oil- 1 tbsp
  • Onion, finely chopped- 1
  • Ginger-Garlic paste- 1 tbsp
  • Tomatoes, finely chopped- 2
  • Kashmiri chili powder- ½ tbsp
  • Note: also add ½ to 1 tsp regular chili powder if you want it spicy
  • Chicken breasts or thighs, diced- 2 breasts or thighs
  • Tomato paste- 2 tbsp
  • Garam Masala- 1 tsp
  • Butter, unsalted- 1 tbsp
  • Sugar- 1 tsp
  • Cream- ½ cup
  • Dried fenugreek leaves- 1 to 2 tbsp (optional)
  • Cilantro, chopped- ¼ cup
  • Salt- 1 tsp
Instructions
  1. Turn on the Instant Pot
  2. Select saute setting at medium temperature.
  3. Add oil to the hot stainless steel pot.
  4. Add onion, season with ½ tsp salt; saute for 2 minutes.
  5. Add ginger-garlic paste, cook for 1 minute.
  6. Add tomatoes, cook for 2 minutes.
  7. Add Kashmiri chili powder, combine well. If you want this curry to be spicy, add ½ to 1 tsp chili powder.
  8. Add chicken, combine well.
  9. Add ½ tsp salt.
  10. Close the pot with the lid.
  11. Select pressure cook setting- set the time to 8 minutes at high pressure.
  12. After 8 minutes of pressure cooking, do a quick pressure release.
  13. Open the lid.
  14. Combine the cooked chicken with the gravy.
  15. Add tomato paste & garam masala, combine well.
  16. Select saute setting at medium temperature.
  17. Add butter, sugar & cream, combine well.
  18. Cook for 2 minutes.
  19. Taste & add salt if required.
  20. Add dried fenugreek leaves & cilantro. Combine well.
  21. Remove the stainless steel pot from the main pot, keep it covered for 5 minutes.
  22. Serve butter chicken along with basmati rice, naan or roti.
  23. This is a finger-licking & delicious butter chicken.
