Grilled Chicken Drumsticks with Homemade Cilantro Marinade
 
 
Ingredients
  • Chicken Drumsticks- 10
Making cilantro marinade
  • Onion, chopped- 1
  • Ginger, chopped- 2 inch slice
  • Green chilies- 2
  • Cilantro, chopped- 1 cup
  • Curry leaves- 3 stalks
  • Salt- to taste
  • Ground pepper- ¼ tsp
  • Water- enough to make a paste
While grilling
  • Olive oil or vegetable oil- for coating
  • Lemon juice- to drizzle on grilled drumsticks
Instructions
  1. Add all the ingredients for making the marinade in a blender and grind it to a smooth thick paste.
  2. You could use skin-on drumsticks or skinless.
  3. In a large bowl, marinate the drumsticks with the cilantro marinade, keep aside for 30 minutes or keep refrigerated overnight.
  4. Have the grill ready, grease the grill with non-stick cooking spray, place the drumsticks on the grill and grill it covered at medium high heat.
  5. Brush the drumsticks with little olive oil, flip it over and grill till it gets browned.
  6. Before you take it out, drizzle lemon juice over each drumsticks, grill it for a couple of minutes and remove it from the grill.
  7. Make sure you don't grill till the drumsticks get dry, it should be juicy inside and crispy outside.
  8. While serving, you could wrap the end of the drumsticks with aluminum foil so that it will be easy to hold.
Making the dipping sauce
  1. After you take the drumsticks out of the marinade, you will still have some marinade left in the bowl.
  2. Pour the marinade in a sauce pan, cook it along with 3 to 4 tbsp water till the raw smell of the sauce goes away, gets thickened and starts to get fried.
  3. Serve in a small bowl along with the grilled cilantro drumsticks.
Baking
  1. Preheat the oven to 400 F.
  2. Place the marinated drumsticks on a baking sheet lined with aluminum foil and greased with non-stick cooking spray.
  3. Bake for 30-35 minutes, flipping it over after 15 minutes and sprayed with olive oil.
  4. Before taking it out, drizzle lemon juice over the baked drumsticks and bake for a couple more minutes.
Pan frying
  1. Heat a skillet over medium heat, add ¼ cup olive oil or vegetable oil.
  2. Place the drumsticks over the oil without crowding and fry till it turns golden brown in color, flipping it over occasionally.
  3. If you want you could add more oil.
  4. Towards the end of frying, drizzle lemon juice over the drumsticks.
  5. Serve hot along with the cilantro sauce.
