Parmesan Roasted Asparagus
  • Asparagus- 1 pound
  • Garlic, cut thin long- 3 cloves
  • Ground Pepper- ½ tsp
  • Salt- to taste
  • Olive oil- 1 tbsp
For Seasoning after the baking
  • Lemon zest- ½ tsp ( grate the skin of the lemon using a veggie grater)
  • Parmesan cheese, freshly grated or frozen- 3 tbsp
  • Basil leaves chopped- 5 leaves
  • Toasted Almond slices- 2 tbsp ( you could toast the almonds in a pan until it gets golden brown)
  • Olive oil-1/2 tbsp
  • Lemon juice-1 tsp
  1. Preheat the oven to 425 F.
  2. Season the asparagus with ground pepper, salt, garlic and olive oil.
  3. Toss them and spread them on a baking sheet lined with parchment paper or aluminum foil.
  4. Place the baking sheet in the preheated oven and bake for 20 minutes.
  1. Combine lemon zest, Parmesan cheese and chopped basil leaves together, keep it aside.
  2. As soon as the asparagus is taken out of the oven, sprinkle the above mix over it.
  3. Drizzle with olive oil, lemon juice and sprinkle the toasted almonds on it.
  4. Serve immediately when it is still hot.
Make sure to sprinkle the cheese mix as soon as the asparagus is taken out of the oven, that way the cheese will melt and turns aromatic and flavorful.
