Zucchini Scallion Pancakes
 
 
Ingredients
  • Zucchini, peeled and diced very small- 1
  • Scallions or green onions, chopped small- 2tbsp
  • Egg, beaten- 1
  • All-purpose flour- 4tbsp
  • Baking powder- ½ tsp
  • Ground pepper- ¼ tsp
  • Salt- as needed
  • Olive oil or cooking spray
Instructions
  1. In a small bowl, beat the egg with a fork and keep aside.
  2. In a large bowl, combine zucchinis, scallions, beaten eggs, flour, baking powder, ground pepper and salt using a fork.
  3. Place a non-stick pan over medium heat.
  4. Spray cooking spray or drizzle olive oil on the pan.
  5. Drop a spoonful of zucchini batter on the pan and spread it evenly to almost round shape.
  6. Let the bottom side turn golden brown and flip it to the other side.
  7. When both sides have turned golden brown and cooked well inside, transfer to a platter.
  8. Enjoy these zucchini scallion pancakes with ketchup.
Notes
There is no need of peeling the zucchinis.
You could add red or white onions chopped instead of scallions.
You could even try adding different spices or veggies.
