  4. Let marinate for 10 minutes.

  8. Place a wok over medium heat, add 1 tbsp sesame oil.
  9. Place the marinated shrimp, pan fry for a few minutes till the shrimp has cooked through.
  10. Transfer to a plate & keep aside.
  11. In the same wok, add 1 tbsp more sesame oil.
  12. Add ginger & garlic, stir fry for 2 minutes.
  13. Add the basil, stir fry till aromatic & ginger-garlic turns golden brown in color.
  14. Add the onion & mixed veggies, stir fry over high heat for a few minutes till veggies have turned soft.
  15. I like to stir fry till the veggies start to turn light golden brown. Tastes better.
  16. Add all the sauces & sambal oelek.
  17. Use low sodium soy sauce, regualr soy sauce is very salty.
  18. Sambal oelek is used in Thai cuisine, it's basically ground chili paste.
  19. If you don't have sambal oelek, add ground black pepper or red chili paste or even chili powder for the heat.
  20. Stir fry for 3 minutes.
  21. Add the pan fried shrimp, stir fry for 3 minutes.
  22. Add the cooked noodles, stir fry over high heat for a few minutes.
  23. If it's dry, add a tbsp more soy sauce & stir fry.
  24. Granish with chopped cilantro.
  25. Finally, add a tsp of pure sesame oil & combine well; stir fry for a minute.
  26. Remove the wok from the heat, keep covered for a few minutes.
  27. Serve on a plate, garnish with basil leaves & enjoy.
  28. This is the best tasting & aromatic shrimip noodle stir fry.
Notes
Shrimp can be replaced with chicken: boneless chicken breast or thighs.
Shrimp noodle stir fry tastes better than chicken.
