Homemade Tortilla and baked tortilla chips

Ingredients
  • Instant corn masa flour or Masa Harina, available in Mexican aisle- 1 cup
  • Warm water- ½ cup or enough to make a soft dough
Instructions
  1. In a large bowl, add the flour and add warm water to it, knead it to a soft dough.
  2. Knead for at least 5 minutes to make it soft.
  3. Make medium sized balls out of the dough.
  4. I flattened the dough using a Tortilla press.
  5. If you have tortilla press: first, cut a plastic freezer bag into two and place these on both sides of the press.
  6. This is to avoid sticking the dough onto the press.
  7. Place one of the dough balls on to the press, close the press and give it a press.
  8. It will flatten the dough and you'll get a round shape.
  9. Peel it from the plastic and transfer it to the hot griddle.
  10. If you don't have the tortilla press, Using a rolling pin, flatten the dough ball in between the plastic sheets into a round shape, as thin as you can make it without tearing.
  11. Heat a cast iron pan or non-stick pan over medium high heat.
  12. Place the flattened dough on the hot pan and let cook for 20 seconds.
  13. Flip it over and let cook on that side too.
  14. Gently press the edges and the center of the tortilla using a spatula until it starts to puff up slightly.
  15. When both the sides get golden brown spots on it, remove from the pan.
  16. Place them in an air tight container to prevent from drying out.
  17. Repeat this process until you have made all the tortillas.
Making Baked Tortilla chips
  1. Preheat the oven to 400F.
  2. Stack up as many tortillas as you want on a cutting board.
  3. Using a sharp knife, gently cut into half and then into quarters, you'll get triangle shaped tortillas.
  4. Single out the cut tortillas.
  5. Grease a baking sheet with non-stick cooking spray.
  6. Place the tortilla triangles on the sheet without crowding them.
  7. Again, spray the top of tortillas with the cooking spray.
  8. You could also sprinkle with some paprika or any other toppings of your choice.
  9. Bake this for 10 minutes or until crispy and golden in color.
  10. Keep an eye on them to avoid burning the chips.
  11. After 10 minutes, it will turn crispy, take out of the oven and cool them.
  12. Enjoy this homemade baked tortillas with homemade Salsa.
