Ingredients
  • Oil- 1 tbsp
  • Green onions, chopped- ¼ cup
  • Kale, chopped- 2 cups
  • Eggs, beaten- 2
  • Turmeric powder- 2 pinches
  • Chili powder- ½ tsp
  • Coriander powder- ½ tsp
  • Garam masala- ½ tsp
  • Salt- ½ tsp
Instructions
  1. In a bowl, crack 2 eggs & beat well using a fork.
  2. Place a pan over medium heat.
  3. Add oil followed by green onions, saute for a minute.
  4. Add kale, saute for 2 to 3 minutes till soft.
  5. Add the beaten eggs, scramble the eggs well.
  6. Add the spices & salt.
  7. Stir fry for a minute.
  8. Serve into a bowl, enjoy with rice or chapati.
