Instant Pot Asparagus-Red Lentil Healthy Soup- Dump & Go Recipe

Ingredients
  • Onion, chopped- 1
  • Garlic, chopped- 2
  • Asparagus, chopped- 9
  • Red lentil, rinsed- 1 cup
  • Ground cumin- 1 tsp
  • Paprika- 1 tsp
  • Ground black pepper- ½ tsp
  • Dried Oregano- 1 tsp
  • Salt- 1½ tsp
  • Water or Chicken stock or Veggie stock- 3 cups
  • Green onions, chopped- ¼ cup
  • Cilantro, chopped- 2 tbsp
Instructions
  1. Chop off the tough ends from the asparagus & roughly chop the asparagus.
  2. Into the stainless steel pot, add all the ingredients except green onions & cilantro.
  3. Instead of water, chicken stock or veggie stock can be added.
  4. Close the pot with the lid.
  5. Select pressure cook setting, set time to 5 minutes at high pressure.
  6. After 5 minutes of pressure cooking, do a quick pressure release.
  7. Combine well.
  8. Using a hand blender, coarsely puree the soup. Or transfer to a blender jar & puree coarsely.
  9. Garnish with green onions & cilantro.
  10. Serve into soup bowls, sprinkle paprika over the soup.
  11. Enjoy with pita chips or bread.
