Instant Pot 10 Minute Cauliflower Spinach Korma- Cooked in Coconut Milk

Ingredients
For Pressure Cooking
  • Onion, chopped- 1
  • Grated ginger- ½ tbsp
  • Grated garlic- ½ tbsp
  • Tomato, chopped- 1 or 2
  • Cauliflower florets- 3 cups
  • Chili powder- 1 tsp
  • Turmeric powder- ¼ tsp
  • Coriander powder- 2 tsp
  • Garam Masala- ½ tsp
  • Salt- 1 tsp
  • Ground black pepper- ¼ tsp
For Saute Cooking
  • Spinach leaves- 2 cups ( I added baby spinach leaves) (optional)
  • Coconut milk- 1 cup
  • Salt- ½ tsp
  • Cilantro, chopped- ¼ cup
Instructions
  1. I've cooked this in the Instant Pot pressure cooker, can be cooked in a regular pressure cooker as well.
  2. Into the stainless steel pot, add all the ingredients mentioned above 'for pressure cooking'.
  3. No need to add water.
  4. Close the pot with the lid.
  5. Select pressure cook setting. Set time to 3 minutes at high pressure.
  6. If using regular pressure you might have to cook for 5 minutes, don't over cook veggies will turn mushy.
  7. After 3 minutes of pressure cooking, do a quick pressure release.
  8. Open the lid and combine well.
  9. Add spinach leaves if adding.
  10. Add coconnut milk, combine well.
  11. Select Saute setting, at normal temperature.
  12. Cook for 5 minutes.
  13. Add ½ tsp more salt to taste.
  14. Add cilantro, combine well.
  15. Cook till the gravy thickens.
  16. Take the stainless steel pot from the main pot.
  17. Serve along with chapati, paratha or rice.
Notes
Cauliflower can be replaced with diced potatoes, cooking time will be the same.
