Easy Brussels Sprouts Thoran- Brussel Sprouts Stir Fried with Coconut

Ingredients
  • Coconut oil- 1 tbsp
  • Mustard seeds- 1 tsp
  • Cumin seeds- ½ tsp
  • Dried whole red chilies- 2, halved
  • Curry leaves- 1 sprig
  • Shallots, sliced- 3
  • Brussels Sprouts, halved- 25
  • Water- 1 cup
  • Chili powder- ½ tsp
  • Turmeric powder- ¼ tsp
  • Grated coconut- ½ cup
  • Salt- 1½ tsp
Instructions
  1. Place a large pan over medium heat.
  2. Add oil, let turn hot.
  3. Add mustard seeds, let splutter.
  4. Add cumin seeds, dried red chilies and curry leaves; saute for a few seconds.
  5. Add shallots, season with ½ tsp salt. Saute till shallots turn golden in color.
  6. Add Brussels sprouts, and 1 cup water.
  7. Cook covered for a few minutes till Brussels sprouts turn soft. Don't over cook them.
  8. Add chili powder, turmeric powder and 1 tsp salt. Combine well.
  9. Add grated coconut, combine well and stir fry over high heat a few minutes till coconut starts to turn light brown & golden brown spots form on the Brussels sprouts.
  10. Taste and add more salt if required.
  11. Take the pan off the heat. Serve in a bowl.
  12. Enjoy as a side dish with rice, chapati, grilled chicken or steak.
