Ingredients
To grind
  • Grated coconut- 1 cup
  • Ginger, chopped- 1 inch slice
  • Green chili- 1 or 2
  • Fresh Mint leaves- 8 leaves
  • Cilantro- ¼ cup (roughly chopped)
  • Water- 1¼ cups
For tempering and cooking
  • Coconut oil- 1 tbsp
  • Mustard seeds- 1 tsp
  • Whole dried red chilies- 2, halved
  • Curry leaves- 1 sprig (optional)
  • Fresh tamarind extract- ¼ cup
  • Water- ¼ cup (to thin down chutney)
  • Salt- ¾ tsp
Instructions
  1. In a blender, grind all the above mentioned ingredients till smooth.
  2. Soak 2 inches fresh tamarind in ¼ cup warm water for 5 minutes, squeeze the tamarind in water to extract juice. Strain the juice and discard the skin. Keep aside.
  3. Place a saucepan over medium heat, add oil and let oil turn hot.
  4. Add mustard seeds, let it splutter.
  5. Add whole dried chilies and curry leaves. Saute for a few seconds.
  6. Add the ground paste to the saucepan, combine well.
  7. Rinse the blender with ¼ cup water and add that to the pan.
  8. Add salt and combine well.
  9. Let cook for 3 minutes.
  10. Add tamarind extract, combine well and cook for 3 minutes till the chutney slightly thickens.
  11. Taste and add more salt if required.
  12. Remove the pan from the heat.
  13. Serve the refreshing and delicious chutney along with dosa or idli.
