Tomatoes in Coconut Yogurt Gravy

Ingredients
For grinding
  • Coconut, grated- 1 cup
  • Small onions- 3
  • Green Chili, chopped- 1
  • Curry leaves- 1 sprig
  • Cumin seeds- ¾ tsp
  • Turmeric powder- ¼ tsp
  • Water- ¾ cup
For cooking
  • Coconut Oil- 1 tbsp
  • Mustard seeds- ½ tsp
  • Dried red chilies- 2, halved
  • Curry leaves- 1 sprig
  • Tomatoes, chopped- 2
  • Water- ½ cup
  • Salt- ¾ tsp
  • Chili powder- ½ tsp
  • Yogurt, beaten- ½ cup
Instructions
  1. In a blender, grind all the above mentioned ingredients 'for grinding' till smooth. Keep aside.
  2. Place a pan over medium heat, add coconut oil.
  3. Add mustard seeds, let it splutter.
  4. Add dried red chilies and curry leaves, saute for a few seconds.
  5. Add tomatoes, saute for 2 minutes.
  6. Add the ground coconut paste, combine well.
  7. Add ½ cup water and let cook for 5 minutes.
  8. Add chili powder, combine well.
  9. Add salt, combine well.
  10. Lower the heat and add beaten yogurt. Combine well and cook for a minute.
  11. Remove the pan from the heat and keep covered.
  12. This is a side dish served along with rice- pour over the rice and enjoy.
