Green Chicken- Cilantro Mint Chicken

Ingredients
  • Chicken breasts, boneless, cubed- 2 breasts
  • Coconut Oil- 1 tbsp
  • Salt- 1 tsp
  • Lime or lemon juice- 1 tbsp
For making the marinade
  • Green onions, chopped- 2 stalks
  • Garlic- 3 cloves
  • Ginger- 2-inch slice
  • Whole black peppercorns- 1 tsp
  • Cumin seeds- ½ tsp
  • Mint leaves- ½ cup
  • Cilantro, chopped- ¼ cup
  • Water- ½ cup
Instructions
  1. Into a blender jar, add all the above-mentioned ingredients 'for making the marinade', grind to a smooth paste.
  2. Cut the chicken breasts into cubes and add them into a bowl.
  3. Or use chicken thighs or bone-in pieces.
  4. Pour the marinade over the chicken, combine well and let marinate for 30 minutes to an hour.
  5. Place a non-stick pan over medium heat.
  6. Add the marinated chicken along with the marinade that's left in the bowl.
  7. Cook covered till the chicken has almost cooked.
  8. Open the lid, cook uncovered till the liquid has dried off.
  9. If you want this dish to be spicy, add ½ tsp ground black pepper.
  10. Increase the heat to high.
  11. Add coconut oil, stir fry for 2 minutes.
  12. Add lime or lemon juice, stir fry for 2 minutes till the chicken has turned golden brown.
  13. Let the chicken turn golden brown, that's when this dish will taste delicious.
  14. This is a dry dish and can be served as an appetizer- if you prefer you can insert a toothpick into each cooked chicken cube. Or serve along with rice, roti etc. Or can be made into wraps or sandwiches.
