Vegetable Cutlet in Tomato-Spinach Gravy

Ingredients
For making Vegetable Cutlets
  • Carrots, shredded- 3
  • Peas- 1 cup
  • Spinach, roughly chopped- 1 cup
  • Cooked Potatoes- 3
  • Chili powder- 1 tsp
  • Garam masala- ½ tsp
  • Coriander powder- 1 tsp
  • Cumin powder- ½ tsp
  • Salt- ¼ tsp
  • Corn starch- 2 tbsp combined with ¼ cup water
  • Bread crumbs- 1½ cups
  • Oil- ¼ cup for pan frying
For making gravy
  • Oil- 2 tbsp
  • Onion, chopped- 2
  • Tomatoes, chopped- 2
  • Spinach leaves- 1 cup
  • Chili powder- ½ to ¾ tsp
  • Garam masala- ½ tsp
  • Coriander powder- 1 tsp
  • Salt- ¼ tsp
  • Cilantro, chopped- 2 handfuls
Instructions
Making Vegetable cutlets
  1. Cook the potatoes either in a microwave or in boiling water till they have turned very soft.
  2. In a large bowl, combine together: carrots, peas, spinach, potatoes, chili powder, garam masala, coriander powder, cumin powder and salt till well incorporated.
  3. Make small balls out of it and flatten between your palms. Keep aside.
  4. Place a frying pan over medium heat, let the pan turn hot. Add oil and let oil turn hot.
  5. In a small bowl, combine cornstarch and water together.
  6. Have bread crumbs ready on a plate.
  7. Dip the vegetable patties first in corn starch mix and then evenly coat with bread crumbs.
  8. Place over the oil and pan fry till both sides turn golden brown.
  9. If you prefer, you could deep fry the vegetable patties.
  10. Transfer the pan fried patties to a plate lined with kitchen paper towel.
Making Tomato-Spinach Gravy
  1. Place a saucepan over medium heat, add oil.
  2. Add chopped onions, season with salt and saute till onions turn translucent.
  3. Add tomatoes and spinach, cook for a few minutes till they have cooked through.
  4. Add chili powder, garam masala, coriander powder and salt if required. Combine well.
  5. Remove the pan from heat, let cool down a bit.
  6. Transfer to a blender and puree to a smooth paste along with ¼ cup water.
  7. Pour the gravy into a deep bowl.
  8. Place the pan fried vegetable patties on the gravy- as shown in the picture.
  9. Garnish with cilantro.
  10. This can be served as an appetizer or as a main dish along with chapati, naan or roti. Tastes Yum!
