Ingredients
For marinating Chicken
  • Chicken breasts, diced- 2
  • Kashmiri chili powder- ¾ tsp
  • Turmeric powder- ¼ tsp
  • Coriander powder- 1½ tsp
  • Salt- ½ tsp
For roasting vermicelli
  • Ghee- 1 tbsp
  • Vermicelli or Semiya- 2½ cups (do not use thin vermicelli)
Making chicken vermicelli
  • Oil- 1½ tbsp
  • Onion, chopped- 2
  • Salt- ½ tsp
  • Grated Ginger- ½ tbsp
  • Grated Garlic- ½ tbsp
  • Green chilies, chopped- 2
  • Whole cardamom- 2, whole cloves- 2, whole cinnamon- 2 inch slice- crushed in a mortar pestle
  • Mixed veggies- 1½ cups (carrot, corn, peas, beans)
  • Green Pepper, chopped- 1
  • Fennel powder- 1 tsp
  • Coriander powder- 1½ tsp
  • Water- 3 cups
  • Cilantro, chopped- 2 handfuls
Instructions
  1. Place a large non-stick cooking pan over medium heat, add ghee.
  2. Add the vermicelli and roast for 5 minutes. Keep it aside.
  3. In a bowl, combine chicken with all the above mentioned ingredients for marinating chicken, let marinate for 5 minutes.
  4. Heat a non-stick cooking pan over medium heat, add oil.
  5. Add onion, season with salt and cook for 2 minutes.
  6. Crush whole cardamom, cloves and cinnamon in a mortar and pestle.
  7. Add grated ginger, garlic, green chilies, crushed cardamom/cloves/cinnamon; combine well and cook till onions turn light golden in color.
  8. Add marinated chicken, cook covered till chicken has almost done.
  9. Add mixed veggies and green pepper, cook covered for a few minutes till veggies turn soft.
  10. Add fennel powder and coriander powder, combine well.
  11. Add 3 cups water, let come to a boil.
  12. Add the roasted vermicelli, combine well and cook for a few minutes till water has dried off and vermicelli turns soft.
  13. Do not over cook vermicelli it will turn mushy.
  14. Garnish with cilantro, combine well.
  15. Remove the pan from the heat, serve the chicken vermicelli along with raita or yogurt combined with chopped onion/tomatoes.
