Banana Pancake
  • Plantain or banana, ripe- 2
  • Corn flour-2 tbsp
  • Sugar- 2tbsp
  • Milk- 1½ tbsp
  • Cardamom powder-1/4 tsp
  • Raisin- 2 tbsp
  • Cashew nuts- 1 tbsp
  • Ghee or Butter- 2-3 tsp
  1. Remove the skin of the ripe plantains or bananas, cut into small slices and mash it with a wooden spoon until smooth and without any hard lumps.
  2. Add the milk, sugar and corn starch, mix it well until it forms a thick batter.
  3. Add cardamom powder, raisins and cashew nuts.
  4. Combine everything and keep aside.
  5. Heat a wide non-stick skillet, add 1 tsp ghee or butter, when it gets hot, pour 1 spoon of banana batter and spread it evenly to a round shape with the back of the spoon.
  6. When it turns golden brown, flip to the other side and let become golden brown on the other side as well.
  7. When both the sides have cooked well, transfer to a platter.
  8. Repeat the same with the remaining batter.
Banana should be ripe to make the delicious pancake.
The batter shouldn't be too watery, if it gets watery, make it thick by adding more of the corn starch.
Make sure to spread the batter on the skillet evenly with the back of the spoon.
