Ingredients
To make a paste
  • Fresh mint leaves- 6
  • Cilantro, chopped- ¼ cup
  • Green chilies, chopped- 2
  • Water- ¼ cup
For cooking
  • Shrimp, deveined- 15 to 20
  • Oil- 1 tbsp
  • Ginger, chopped small- 2 inch slice
  • Garlic, chopped- 2 cloves
  • Onion, chopped- 1
  • Tomato, chopped- 1
  • Soy sauce, low-sodium- 2 tbsp
  • Cornstarch- 1 tbsp mixed with 2 tbsp cold water
  • Ground pepper- ¼ tsp
  • Green onions, chopped- 2 sprigs
  • Salt- to taste
Instructions
  1. In a blender, grind the fresh mint leaves, cilantro and green chilies along with ¼ cup water to a smooth paste. Keep aside.
  2. Place a non-stick cooking pan over medium heat, add oil.
  3. Add chopped ginger and garlic, saute till they turn golden in color.
  4. Add chopped onion, season with a few pinches of salt, saute till onion turn light golden in color.
  5. Add chopped tomato, cook for a minute till it's mashed up.
  6. Add shrimp and cook covered for a few minutes till shrimp turns pink.
  7. Add the mint-cilantro-green chili paste to the shrimp, combine well and cook till the raw smell goes away for 4 to 5 minutes.
  8. Add soy sauce, combine well.
  9. Add ¼ cup water and cook for a minute.
  10. Add corn starch mixed with water, combine well and let the gravy thicken.
  11. Taste and add salt if needed.
  12. Add ground pepper, combine well.
  13. Finally, garnish with chopped green onions.
  14. Serve as a main dish or side dish along with rice, roti, noodles etc.
