For pan roasting the fish
  • Oil- ¼ cup
  1. Clean the whole tilapia under running water, remove the gills and any internal organs. There should be enough room inside the fish for stuffing the shrimp. If it doesn't have enough space, using a sharp knife, cut inside the fish gently without breaking the outside of the fish.
  2. Put 2 to 3 gashes on both sides of the fish.
  3. Combine the above mentioned ingredients 'for marination' in a small bowl.
  4. Spread it on the fish and let marinate for 30 minutes or longer.
  5. In the meantime, devein and clean the shrimp, keep aside.
  6. Heat a wide non-stick pan, add oil, to the oil add minced ginger and garlic, saute until aromatic.
  7. Add the onion, salt and saute until translucent.
  8. Add chopped tomatoes, saute until tomatoes turn mashed.
  9. Now, add the cleaned shrimp along with chili powder, garam masala, turmeric powder, fennel powder, coriander powder. Cook the shrimp for a few minutes.
  10. Cook till the stuffing gets dry without any liquid, for 3 to 4 minutes.
  11. Garnish with cilantro and remove from the heat.
  12. Preheat the oven to 350F.
  13. Place the marinated tilapia on a clean cutting board, stuff the cooked shrimp into the inside of the tilapia and keep the stuffing intact.
  14. Using a clean kitchen twine, tie the tilapia tight in such a way that the stuffing won't come out.
  15. Heat a wide non-stick pan over medium heat, add the oil and place the stuffed tilapia, pan roast the tilapia.
  16. When it turns lightly browned on one side, flip it over and let brown the other side as well.
  17. Cook both sides until lightly browned and cooked through.
  18. Remove from the pan and transfer to a baking sheet.
  19. Place it in the preheated oven and bake for 15 minutes. After 5 minutes of baking, flip the tilapia to the other side and bake or the remaining 10 minutes.
  20. Before serving, cut the twine using a clean kitchen scissor and serve on a platter.
  21. Garnish with veggies or any sides of your choice.
While pan roasting the tilapia, there should be enough oil, other wise the fish will stick to the pan.
Needless to say the shrimp stuffing tasted delicious, if there is any excess stuffing; serve it along with the fish as a side dish.
