Shrimp Mushroom Stir Fry in Peanut Butter

Ingredients
For Marinating shrimp
  • Shrimp, de-veined- 15
  • Corn starch- 1 tbsp
  • Ginger-garlic paste- ½ tbsp
  • Ground pepper- ½ tsp
  • Sesame seeds- ½ tbsp
  • Salt- ½ tsp
For Stir-Frying
  • Oil, used for frying shrimp- 2 tbsp
  • Ginger, minced- 2 inch
  • Garlic, minced- 2 cloves
  • Dry red chili flakes- ½ tsp
  • Small onions, chopped- 10
  • Mushrooms, sliced- 8 oz
  • Peanut butter- 2 tbsp
  • Soy sauce- 2 tbsp (use low-sodium)
  • Green onions, chopped- 2 stalks
  • Sesame oil-1/2 tsp
Instructions
  1. Marinate the shrimp with the above mentioned ingredients "for marinating shrimp" for 10 minutes.
  2. Shallow fry the shrimp in oil. Keep aside.
  3. Place a wok or pan over medium heat, add 2 tbsp oil used for frying shrimp.
  4. Add minced ginger and garlic, saute till light golden in color.
  5. Add dry red chili flakes, saute for a couple of seconds.
  6. Add small onions and saute till it turns golden in color.
  7. Add mushrooms and stir fry till lightly browned.
  8. Add the fried shrimp to the mushrooms, stir fry for a minute.
  9. Add peanut butter and combine well.
  10. Add soy sauce and stir fry for a minute.
  11. Taste & add salt if required.
  12. Add green onions and stir fry for a few seconds.
  13. Finally, add sesame oil, stir fry for a couple of seconds.
  14. Serve as an appetizer or as a side dish.
