Potato Broccoli In Caramelized Onion Gravy

For making caramelized onion gravy
  • Olive oil- 2 tbsp
  • Onions, chopped- 3
  • Garlic, chopped- 3 cloves
  • Salt- to taste
  • Italian seasoning- 2 tbsp
  • Water- ¾ cup
For cooking
  • Potatoes, diced- 4
  • Broccoli florets- 1, small
  • Ground black pepper- 1 tsp
  • Parsley, chopped- 1 handful
  • Salt- to taste
  1. Place a large pan over medium heat, add olive oil.
  2. Add chopped onions and a little salt, saute till translucent.
  3. Add garlic and Italian seasoning, saute till onions start to turn caramelized. Don't over brown it.
  4. In a blender, puree the onions along with ¾ cup water to a smooth paste. Keep aside.
  5. In a saucepan cook diced potatoes along with ¼ cup till it turns fork tender.
  6. Add broccoli to the cooked potatoes and cook covered for a few minutes till broccoli has just cooked. Don't over cook broccoli.
  7. Pour the pureed caramelized onion to the cooked potatoes and broccoli, combine well.
  8. Add some water to thin down the gravy.
  9. Add ground black pepper and more salt to taste, combine well and cook for a couple of minutes.
  10. Sprinkle parsley over it and cook for a minute.
  11. Remove the pan from the heat and keep covered.
  12. You could serve this with chapati or roti or combine with pasta of your choice to make a one pot meal.
