Shrimp Rice Noodles
  • Rice Noodles
  • Shrimp, devined and shelled- 15
  • Oil- 2 tbsp
  • Onion, diced-1
  • Green pepper, diced-1
  • Red pepper, diced-1
  • Celery, diced- 3 stalks
  • Lemon grass, white part sliced- 4 slices
  • Basil leaves- 8
  • Soy sauce- 3 tbsp
  • Oyster sauce- 2 tbsp
  • Chili paste- 1 tsp
  • Roasted red pepper paste ( Thai Kitchen, optional)- 1 tsp
  • Ground pepper- 1 tsp
  • Sesame oil- 1 tbsp
  • Green onion, chopped- 1 stalk
  • Cilantro, chopped- 2 handful
  1. Cook the rice noodles in boiling water till it's cooked well, rinse it under cold water, drizzle sesame oil over the noodles and keep aside.
  2. Place a large wok or non-stick pan ove medium heat.
  3. Add oil, add onions, green pepper, red pepper and celery.
  4. Stir fry till the veggies turn slight tender but still crispy.
  5. Add lemon grass and basil leaves, cook for a minute.
  6. Add shrimp and cook for a few minutes.
  7. Now, add soy sauce, oyster sauce, chili paste, roasted red pepper and ground pepper.
  8. Combine well and stir fry for a few minutes.
  9. Add the cooked noodles rinsed under cold water and drizzled with sesame oil.
  10. Stir fry for a couple of minutes.
  11. Add cilantro and green onions, cook for a few seconds.
  12. Serve on a plate and enjoy.
  13. If you want you can discard the lemon grass before serving.
Use chow mein instead of rice noodles.
Add chicken instead of shrimp.
