Coconut Burfi or Sweetened Coconut Rolls

Ingredients
  • Grated coconut- 1 cup
  • Sugar- ½ cup
  • Sweetened condensed milk- 2 tbsp ( or use ½ cup sugar)
  • Ground cardamom- 2 whole smashed, discard the skin
  • Ghee- 2 tbsp
  • Almonds, skin removed and chopped- 3 tbsp (optional)
  • Melted semi-sweet chocolate- to garnish the rolls
Instructions
  1. Grease a baking pan with ghee or cooking spray, keep aside.
  2. Place a large non-stick saucepan over medium heat, add 1 tbsp ghee.
  3. Add grated coconut and sugar, combine well.
  4. Let the sugar melt.
  5. Now, add the condensed milk, keep stirring,
  6. Add ground cardamom to the mixture, smash 2 whole cardamoms using mortar-pestle, discard the skin and add the ground seeds.
  7. Keep cooking till the coconut mixture starts to pull away from the pan and has thickened.
  8. Add ghee and chopped almonds, keep stirring for a minute.
  9. Spread the coconut mixture onto the greased pan, using a spatula even out the surface, let it cool down.
  10. When it has cooled down, make rolls out of it, keep it aside.
  11. Take the chocolate chips or chocolate bars in a microwave-safe glass bowl and microwave to high heat for 2 minutes or till melted. Don't overheat the chocolate as it will burn pretty fast.
  12. You could pour the melted chocolate into a ziploc bag, close the bag, make a small cut at one end of the bag and draw lines or any pattern on the coconut rolls.
  13. Let the coconut rolls rest for some time or you can chill it in the refrigerator and enjoy.
  14. Double or Triple the ingredients to make a large batch.
Notes
-Add ½ cup sugar instead of condensed milk. By adding sugar the burfi will solidify harder so that you can cut it into diamond or square shapes.
-If using sugar, instead of condensed milk: After spreading the coconut mixture on the greased pan, don't let it rest for a long time it would harden & will be difficult to cut into diamond or square shapes.
-If using condensed milk: the burfi wouldn't solidify much so make it into rolls.
-Double or Triple the ingredients to make a large batch.
