Pan Fried Cajun Chicken
 
 
Serves: 3 people
Ingredients
To marinate chicken
  • Chicken breasts, halved - 3
  • Cajun seasoning- 1½ tbsp
  • Lemon juice- 1 tbsp
  • Ground pepper- ¼ tsp
  • Corn flour- 2 tbsp
  • Salt- to taste
For pan frying:
  • Olive oil- 1½ tbsp
  • Sesame oil- ½ tbsp
Sautéing:
  • Onion, cut long- 1, large
  • Cherry tomatoes- 15
  • Cajun seasoning- 2 tsp
  • Salt- a few pinches
Instructions
  1. Marinate the chicken with the above mentioned "to marinate chicken" ingredients. Keep aside for 5 minutes.
  2. Place a large non-stick pan over medium heat.
  3. Add olive oil and sesame oil to the pan.
  4. Place the marinated chicken without crowding in the pan, cook the chicken, flip it over and cook till both sides turn lightly browned.
  5. Transfer the chicken to a plate.
  6. Add some more oil and cook the rest of the chicken.
  7. After cooking the chicken, in the same pan add the chopped onion.
  8. Season with cajun seasoning and a few pinches of salt.
  9. Saute the onion and let it turn slightly tender.
  10. Add cherry tomatoes and saute for a few minutes.
  11. Don't over cook the onions and tomatoes.
  12. Remove the pan from the heat.
  13. Spread the sautéed onion/cherry tomatoes on a plate, place the pan fried cajun chicken over it and serve.
Notes
Making Cajun chicken salad: Roughly chop the pan fried cajun chicken and add over the greens, drizzle with your favorite salad dressing and serve.
