Red Quinoa with Veggies
  • Red Quinoa- 1 cup
  • Water- 2 cups ( or use vegetable stock or chicken stock)
  • Carrot-1 large, cut into wedges
  • Mushroom, halved- 1 cup
  • Bok choy or spinach, chopped- 1½ cups
  • Olive Oil- 1½ tbsp
  • Whole Cinnamon- 2 inch slice
  • Whole Cardamom, smashed- 3
  • Whole cloves-3
  • Garam masala- 2 tsp
  • Ghee or butter- 2 tbsp
  • Ground pepper- ½ tsp
  • Salt- to taste
  1. Rinse the quinoa taken in a strainer under running water, this will help to remove any bitter flavor from the quinoa.
  2. Place a large cooking pan over medium heat, add oil, let it turn hot.
  3. Add whole cinnamon, cardamom and cloves to the oil, saute for a couple of seconds.
  4. Add the veggies (carrot, mushroom and bok choy or spinach), saute for a minute.
  5. Add the soaked quinoa, combine to the veggies.
  6. Add salt to it, combine.
  7. Add water and cook till quinoa has cooked well and the water has almost dried off.
  8. Add ground pepper and garam masala to it, combine well, cook for a minute.
  9. Taste and add salt according to your needs.
  10. Add 2 tbsp ghee to the cooked quinoa and veggies, combine well, cook for a minute.
  11. Remove from the heat and keep it covered
  12. Serve this as a side along with grilled chicken/steak or with grilled corn
•Instead of water add vegetable stock or chicken stick to make it more flavorful.
•Add any of your favorite veggies.
