Roasted Herb Potatoes
 
 
Ingredients
  • Potatoes, cut into thick wedges- 5, large
  • Olive oil- 5 to 6 tbsp
  • Paprika- 3 tsp
  • Turmeric powder- ¼ tsp (optional)
  • Oregano, fresh or dried- leaves from 1 stalk
  • Thyme, fresh- leaves from 1 or 2 stalk
  • Rosemary, fresh- leaves from 1 stalk
  • Ground pepper- ½ tsp
  • Salt- to taste
  • Water- ¼ cup
Instructions
  1. Peel and cut the potatoes into thick wedges, all of almost same size.
  2. In a large bowl, combine the potatoes with paprika, turmeric powder, oregano, thyme, rosemary, ground pepper and salt.
  3. Place a non-stick pan over medium heat.
  4. Add the marinated potatoes into the pan and add ¼ cup water, cook covered.
  5. Cook till the potatoes are only just done, don't over cook it. It should be slightly firm.
  6. Let all the water in the pan dry off, if there is any water in the pan cook uncovered in high heat.
  7. Increase the heat, add 2 tbsp of olive oil and saute till potatoes turn light golden in color.
  8. As the potatoes get dry, add more of the olive oil 1 tbsp at a time till you pour 5 to 6 tbsp or more if you prefer and stir fry till potatoes turn light brown in color.
  9. Taste, add more ground pepper and salt as needed.
  10. Serve on a platter and garnish with rosemary or thyme.
Notes
•You could add any kinds of herbs and seasoning you want: dried basil, Italian seasoning etc.
•If you want it to be spicy, add chili powder.
