Roasted Brussel Sprouts with Almonds
 
 
Ingredients
To marinate brussel sprouts
  • Brussel sprouts- 20
  • Garlic, chopped- 2 cloves
  • Thyme- 2 sprigs
  • Rosemary- 2 sprigs
  • Salt- ½ tsp
  • Ground pepper- ½ tsp
  • Lemon zest- zest of ½ lemon
  • Red wine vinegar or Soy sauce- 2 tbsp
  • Olive oil- 2 tbsp
  • Other ingredients
  • Almonds, halved- 8
  • Parmesan cheese, grated- ½ cup
  • Olive oil- 2 tbsp
Instructions
  1. Preheat oven to 350 F.
  2. Combine brussel sprouts with the above mentioned ingredients to marinate.
  3. Line a baking sheet with aluminum foil.
  4. Grease with non-stick cooking spray.
  5. Spread the brussel sprouts evenly over the aluminum foil.
  6. Bake for 25 minutes. After 10 minutes of baking toss the brussel sprouts and bake again.
  7. After 25 minutes of baking, sprinkle parmesan cheese, almonds and olive oil over it and bake for another 5 minutes.
  8. Total baking time is 30 minutes.
  9. Remove from the oven and serve warm as a side dish.
Notes
•You could bake Asparagus in the same way.
