Easy & delicious tomato chicken…

This is one of my favorite chicken dishes that I tend to make often. Marinated chicken cooked with shallots & tomatoes, towards the end stir-fried till brown. Flavourful & delicious chicken, goes well with rice, chapati, appam, etc.

Tomato Chicken

Ingredients

For marination

  • Chicken, boneless- 2 breasts or thighs
  • Chili powder- 1 to 1 1/2 tsp
  • Turmeric powder- 1/4 tsp
  • Cumin powder- 1 tsp
  • Coriander powder- 2 tsp
  • Garam Masala- 1/2 tsp
  • Salt- 1 tsp

For Cooking

  • Coconut oil- 2 tbsp
  • Shallots, sliced- 4 or 1 large onion
  • Ginger, minced- 1/2 tbsp
  • Garlic, minced- 1/2 tbsp
  • Curry leaves- 1 sprig
  • Tomato, chopped- 2, large
  • Tomato paste- 2 tbsp
  • Salt- 1/2 tsp
  • Cilantro, chopped- 1/4 cup

Instruction

  1. Combine the chicken with the above-mentioned ‘for marination ingredients’, keep aside for 15 minutes.
  2. Place a large pan over medium heat, add oil, add ginger-garlic. Saute till golden in color.
  3. Add shallots or onion & curry leaves, season with 1/2 tsp salt.
  4. Cook till shallots or onion turn translucent.
  5. Add tomatoes, cook till it gets mashed up.
  6. Add the marinated chicken and combine well. Cook covered till chicken has cooked well.
  7. Add tomato paste, combine well.
  8. Cook for 3 minutes.
  9. Have a taste, add more salt if needed.
  10. Open the lid, cook over high heat & stir fry till chicken turns slightly brown.
  11. Garnish with cilantro.
  12. Remove the pan from the heat, keep it covered for a few minutes.
  13. Serve into a bowl, enjoy with rice, chapati, appam, etc.
