Crispy & cheesy potato croquettes are the perfect snack…

Croquettes are similar to Indian cutlets, breaded mashed potatoes that are deep fried. When you have leftover mashed potatoes, turn them into croquettes.

These are crispy outside, soft inside & so delicious.

I stuffed mozzarella cheese inside the potatoes which have made these croquettes even more delish & cheesy.

Ingredients
For making mashed potato
  • Cooked potatoes- 5
  • Paprika- 1 tsp
  • Garlic powder- ½ tsp
  • Dried oregano- ½ tsp
  • Ground black pepper- ⅛ tsp
  • Salt- ½ tsp
  • Cilantro or parsley, chopped- 2 tbsp
Seasoning flour
  • All purpose flour- ½ cup
  • Paprika- ½ tsp
  • Dried oregano- ½ tsp
  • Ground black pepper- 2 pinches
Other ingredients
  • Egg- 1
  • Breadcrumbs- 1 cup
  • Mozzarella cheese sticks
  • Oil- for shallow or deep frying
Instructions
  1. Cook potatoes in the microwave in potato setting or in water over stovetop till they turn fork tender. Mash them & add the seasonings & cilantro; combine well.
  2. Make medium-sized ball, flatten it, place 1-inch slice of mozzarella cheese on the center.
  3. Shape into logs or round shapes.
  4. Crack an egg to a bowl, and beat well.
  5. On a plate, combine flour & add the seasonings.
  6. Take breadcrumbs in another plate.
  7. First, roll in flour, then dip in egg wash & then in breadcrumbs to coat.
  8. Breaded potatoes can be made well in advance & kept in the fridge for a few days or in the freezer for a few months.
  9. Add some oil to a hot pan, place the breaded potatoes.
  10. Can be either shallow fried or deep fried, till golden brown & crispy.
  11. Enjoy right away that's when it will be crispy, half the croquottes & enjoy the melted cheese.
  12. Dip in your favorite dipping sauce & enjoy; Yum!
Notes
I tried air frying the croquettes, 15 minutes of air frying they didn't turn that crispy. When air fried for 20 minutes, the cheese bursted. So try air frying for 15 minutes.
