Baked Sweet Potato and Chicken in an Asian Sauce

Seriously, why do weekends have to end??? I remember once one of my good friends answered to this question: so that we could have another weekend. Hmm, well said my dear friend; but still why??? sigh! Every Sunday evening I get the empty feeling and on top of that today has been a gloomy day with frequent drizzling. Rain always make me home sick and depressed too. Spending some time with my plants and sipping a cup of coffee did make me feel good, to make me feel better I decided to blog.

One of my favorite ways of making sweet potato is to bake till it gets crunchy and then munch it. Last week when I got sweet potatoes I was very tempted to make the baked fries out of it. I did fall for the temptation and baked it, but this time I combined it with chicken and made a totally different dish. I also prepared an Asian sauce and sauteed the chicken and sweet potato in it which made the dish taste phenomenal!

Baked Sweet Potato and Chicken in an Asian Sauce

Ingredients:

For marinating sweet potato:

  • Sweet potatoes, cubed- 2
  • Soy sauce- 2 tbsp
  • Chili paste- 1/4 tsp
  • Ground pepper- 1/4 tsp
  • Brown sugar- 1/4 cup

For marinating chicken:

  • Chicken breasts, cut into stripes- 3 breasts
  • Egg white- 1
  • Corn flour- 2 tbsp
  • Soy sauce- 2 tbsp
  • Chili paste- 1/4 tsp
  • Ground pepper- 1/4 tsp
  • Ginger-Garlic paste- 1 tsp

For making sauce:

  • Soy sauce- 3 tbsp
  • Brown sugar- 2 tbsp
  • Ground Pepper- 1/2 tsp
  • Chili paste- 1/4 tsp
  • Ginger-garlic paste- 1 tsp
  • Water- 1/4 cup

Other ingredients:

  • Oil- enough for frying chicken
  • Cooking spray- to spray on baking sheet
  • Spring onions, cut into stripes- 2 stalks

Instruction

  1. Cut the sweet potatoes into cubes and marinate it in the above mentioned ingredients for “marinating sweet potatoes”.
  2. Preheat oven to 400 F or 200 C.
  3. Spread the sweet potatoes on a baking sheet lined with aluminum foil and sprayed with cooking spray.
  4. Bake for 25 minutes, let cool down and keep aside.
  5. Sweet potatoes will turn caramelized and perfectly cooked with a spicy hint in it, you’ll find it hard to stop tasting it.
  6. But remember we need to combine it with the chicken so you need to overcome this temptation 🙂
  7. Marinate the chicken in the above mentioned ingredients for “marinating the chicken”, keep aside for 15 minutes.
  8. Fry the chicken in enough oil till it turns golden in color.
  9. Transfer to a paper towel and keep aside.
  10. After you fry the chicken, there will be some marinade that you used to marinate the chicken in the bowl.
  11. Put the cut green onions in that marinade and fry it as well till golden brown in color, keep aside.
  12. Place a saucepan over medium heat, add the all the above mentioned ingredients “to make the sauce”.
  13. Combine well and let the sauce come to a boil.
  14. Heat for a minute and remove from the heat.
  15.  In a large pan, add the baked sweet potatoes, fried chicken, fried green onions and combine well.
  16. Pour the sauce over it and combine well.
  17. Heat for 2 minutes and remove from the stove.
  18. Serve on a plate along with red rice or white rice.

Tips:

  • If you want more sauce, double the amount of ingredients to make the sauce.
