Baked Salmon and Roasted Veggies- Healthy Dinner

This is my kind of dinner, especially on a week day. After a tiring day at work, mostly I won’t have the energy to make a scrumptious dinner. On such days, I can only think of easy breezy cooking. I don’t do much batch cooking and freeze the food for a few days. I’m all about freshness and honestly it doesn’t take a lot of time to cook an easy dinner. If I’m super lazy, I dine out.

The other day, I felt lazy to cook and didn’t feel like going out as well. That’s when my oven comes to rescue me and bakes a delicious dinner for me. I seasoned the salmon and tossed the veggies with some spices and popped them into the hot oven. I let the oven do all the cooking when I sat back and relaxed.

This is an easy recipe, all you have to do is season the salmon with simple spices: you could use any kind of seasonings of your choice. Same with the veggies: have any veggies of your choice and sprinkle spices over it and toss them in a baking tray. Let them bake in the oven till nicely done. A healthy delicious dinner will be ready in no time. You could also serve dinner rolls or bread.

Ingredients
To season Salmon
  • Salmon- 2 pieces
  • Chili powder- ¾ tsp
  • Paprika- 1 tsp
  • Ground cumin- 1 tsp
  • Dried Oregano- 1 tsp
  • Ground pepper- ¼ tsp
  • Soy sauce, low-sodium- 2 tbsp
To season veggies
  • Mixed Veggies- red pepper, yellow pepper cut into wedges, small potatoes halved, green beans, mushrooms etc
  • Chili powder- ¾ tsp
  • Paprika- 1 tsp
  • Ground cumin- 1 tsp
  • Dried Oregano- 1 tsp
  • Ground pepper- ¼ tsp
  • Soy sauce, low- sodium- 4 tbsp
Other ingredients
  • Non-stick cooking spray
  • Salad dressing of your choice
  • Lemon wedges
Instructions
  1. Pre heat the oven to 400 F or 200 C.
  2. In a bowl, combine all the spices mentioned above 'to season salmon' along with soy sauce, make into a paste.
  3. Spread over the salmon and let marinate for 10 minutes.
  4. Place on a baking sheet lined with aluminum foil.
  5. Place the seasoned salmon on the foil.
  6. Spray non-stick cooking spray- coconut oil or olive oil or veg oil over the salmon.
  7. In a large baking sheet lined with aluminum foil, spread the mixed veggies.
  8. Season the veggies with the spices mentioned above 'to season veggies' along with soy sauce, toss the veggies well.
  9. Spray non-stick cooking spray over the veggies.
  10. Place both the salmon and mixed veggies into the preheated oven. If you cannot keep both trays on the middle rack, place the veggie tray on the top rack and salmon tray on the middle rack.
  11. Bake the salmon for 30 minutes. Remove from the oven.
  12. Drizzle lemon juice and sprinkle ground pepper over the baked salmon.
  13. Bake the veggies for total 45 minutes. Remove from the oven.
  14. Place the salmon and veggies on a plate, along with dinner rolls.
  15. Before serving, pour your favorite salad dressing over the salmon and veggies. Enjoy.
