Asian Style Chicken Vermicelli Stir Fry | Perfect One Pot Meal

Chicken, vegetables & vermicelli combined together, a perfect one-pot meal…

One-pot meals are my favorite, on a busy day or lazy day or any day one-pot meals come to rescue me. The beauty of one-pot meals is that we can cook everything in one pot, from the protein to the vegetables and the starch. And who doesn’t enjoy minimal clean-up after cooking?

In this dish, I’ve mixed chicken, mixed vegetables & vermicelli. The possibilities are endless, so get creative and try different combinations of protein, vegetables, and starches.


Asian Style Chicken Vermicelli Stir Fry | Perfect One Pot Meal

Ingredients
  • Oil- 1 tbsp
  • Garlic, chopped- 2 cloves
  • Ginger, chopped- 1-inch slice
  • Green onions, chopped- 2 tbsp
  • Dried red chili flakes- 1 tsp
  • Onions, chopped- 1
  • Boneless chicken diced- 1 chicken breast or thighs
  • Salt- ½ tsp
  • Ground black pepper- ⅛ tsp
  • Mixed veggies, cut small- 1 cup (carrot, beans, corn)
  • Soy sauce- 2 tbsp
  • Hoisin sauce- 2 tbsp
  • Tomato ketchup- 1 tbsp
  • Vermicelli- 1½ cups (cut into 2-inch slices)
  • Water- 1¾ cups
  • Cilantro, chopped- ¼ cup
  • Green onions, chopped- 2 tbsp
Instructions
  1. Place a large saucepan over medium heat.
  2. Add oil, let turn hot.
  3. Add ginger, garlic & green onions; saute till they turn light golden in color.
  4. Add dried red chili flakes, saute for a few seconds.
  5. Add onion, season with ½ tsp salt.
  6. Saute & let the onion turn translucent.
  7. Add the diced chicken, season with ground black pepper & combine well.
  8. Cook covered till the chicken has almost cooked through.
  9. Add the mixed veggies, combine well.
  10. I've added corn, carrot & green beans. Any kind of mixed veggies can be added.
  11. Cook covered for a few minutes till the veggies turn slightly soft.
  12. Add soy sauce, hoisin sauce & tomato ketchup, combine well.
  13. Add vermicelli, combine well.
  14. I've added the vermicelli that's cut into 2-inch slices, not the long vermicelli.
  15. Stir fry for 2 minutes.
  16. Add water, combine well.
  17. If you want this to be flavourful, chicken or vegetable stock can be added instead of water.
  18. Cook covered for a few minutes till vermicelli turns soft & the liquid dries off.
  19. Open the lid, cook over high heat for a few minutes.
  20. Add chopped cilantro & green onions, combine well.
  21. Take the pan off the heat, keep covered for a few minutes.
  22. This can be enjoyed for lunch or dinner, perfect one-pot meal.
