Instant Wheat Dosa or Crepes is my go-to recipe, can be enjoyed with literally any kind of curries. This time, I served the wheat dosa with a healthy & tasty mixed vegetable curry.

Serves: Makes 12
Ingredients
  • Wheat flour or Atta- 2 cups
  • Water- 2½ cup
  • Salt- ½ tsp
  • Ghee- as required
Instructions
  1. To a blender jar, add wheat flour & water.
  2. I use the wheat flour or atta that's for making chapatis.
  3. If you prefer, you can also add an egg. I skip adding eggs.
  4. Blend to a smooth batter.
  5. Pour in a large bowl, add salt & combine well.
  6. Place a tawa over medium heat, let turn hot.
  7. Grease with oil or ghee.
  8. Pour a ladleful of batter on the hot tawa.
  9. Spread using the back of the ladle to a thin round shape.
  10. Drizzle some ghee.
  11. Let the bottom side cook & turn brown.
  12. Flip it over & let the other side cook as well.
  13. Transfer to a plate & enjoy warm with any kind of curries.
  14. Leftovers can be kept in the refrigerator.

 

Mixed Vegetable Curry Recipe

Ingredients
  • Oil- 1 tbsp
  • Cumin seeds- 1 tsp
  • Onions, chopped- 2
  • Ginger-Garlic paste- ½ tbsp
  • Tomatoes, chopped- 2
  • Eggplant, diced- 2 or 3 small sized
  • Green peppers, diced- 2
  • Chili powder- 1 tsp
  • Turmeric powder- ¼ tsp
  • Cumin powder- 1 tsp
  • Coriander or Fennel powder- 1½ tsp
  • Garam Masala- ½ tsp
  • Salt- 1½ tsp
  • Tomato paste- ¼ cup
  • Water- 1 cup
  • Cilantro, chopped- ¼ cup
Instructions
  1. Place a saucepan over medium heat.
  2. Add oil, let turn hot.
  3. Add cumin seeds, saute for a few seconds.
  4. Add onions, season with ½ tsp salt & ginger-garlic paste.
  5. Cook till onions turn translucent.
  6. Add tomatoes & eggplant, combine well.
  7. Cook covered for a few minutes.
  8. If it's getting dry, add ½ cup water & cook covered.
  9. Add green peppers, cook till peppers turn slightly soft. Do not overcook the peppers till they turn mushy.
  10. Add all the spices & 1 tsp salt; combine well.
  11. Add tomato paste, combine well.
  12. Add ½ cup water, cook for 3 minutes.
  13. Finally, garnish with cilantro.
  14. Serve to a bowl, enjoy with rice, chapati, or dosa.
Notes
Any kind of mixed vegetables can be added- mushrooms & green peppers, cauliflower & green peppers make a great combo.
