Roasted Red Pepper and Peanut Butter Sauce

Peanut butter made all the difference…

Now, I know what to do with roasted red peppers. I’d been wanting to make something out of the roasted red peppers that I’d bought a few weeks ago. Last weekend, I did some experimentation with it. Made a sauce out of it, while making the sauce I added peanut butter which made a great difference in taste and flavor of the sauce. I became a slave of this sauce.

I used canned roasted red peppers, it was in a vinegar/salt/sugar solution. I drained the liquid and just used the red pepper, since it was soaked in vinegar the sauce had a slight tangy taste and I absolutely loved it. After making the sauce, I added baked small potatoes in the sauce and cooked it. A terrific dish that can be served as a side or can be combined with pasta as well. How I love roasted red peppers!

Roasted red pepper and peanut butter sauce

Ingredients

To puree

  • Roasted red peppers, canned- 3, drained
  • Peanut butter- 3 tbsp
  • Soy sauce- 1 tbsp
  • Chili paste- 1 tsp (or add chili powder)

For cooking

  • Olive oil- 1 tbsp
  • Dried basil- 2 tsp
  • Salt- to taste

Instruction

  • If using canned roasted red peppers, drain the liquid.
  • In a blender puree the above mentioned ingredients to a smooth paste. Add some water to thin down the puree.
  • Place a pan over medium heat, add olive oil.
  • Pour the sauce into the pan, heat it up.
  • Add dried basil, combine well, cook for a few seconds.
  • Taste and add salt if needed.
  • Serve as a dip, combine pasta in the sauce, add chicken or fish, there is a whole lot of things you can do with this sauce.
  • I combined baked small potatoes with this sauce and cooked in it for sometime, tasted amazing, will post the recipe soon.
