Pesto, my new crush…

I am speechless and at the same time speech full while talking about pesto. My latest favorite, my crush, my love, my everything. I’m totally over it, my hubby is glad it’s a sauce and not a Man, lol 😛 Well, I’ve tried pizzas spread with pesto sauce a few times but it was two days ago I actually explored pesto to the fullest. I came home with a jar of pesto, at first opened the lid and smelled it. I couldn’t stop inhaling, it was full of flavor and aromatic and I fell head over heels for it instantly. I knew it, that jar wouldn’t be enough for me.

I’m glad that I’ve basil growing really good in my garden. Now, I know what to make with it after I harvest them. I know the recipe for making it, but haven’t tried it yet. I’ve no idea why did I wait this long, better late than never!

So, what’s the first thing I did with pesto? I had store bought Naan as well, so I didn’t waste a minute looking for new recipes. I smeared the naan with pesto, lots and lots of pesto and lotsss, placed cooked scallops over it and baked it for 5 minutes. This was my last night’s dinner. As I took the baked naan out of the oven, I stood still enjoying the aroma and the refreshing flavor of pesto. It was hot and I couldn’t resist. I chewed a slice of naan, closed my eyes and what? Mmmm, Mmmmm, Mmmm, a gazillion times!…and annoyed my hubby to the core 🙂

What is pesto?

Pesto is a sauce made of of fresh basil, pine nuts, olive oil, garlic and parmesan cheese. Of course, it’s a very healthy sauce and is popular in Italian cuisine. Pesto sauce can be added to pizzas, pastas, chicken or just spread it over bread, toast it and enjoyy….it’s that good!!!

For tonight’s dinner, I am making beef pesto stir fry. I told ya, I am all over it 🙂 Also, I’ll soon make pesto from scratch and will share the recipe with you all. How can I not share with you all lovely people 🙂

Pesto Scallop Naan (Lazy to cook, make this and enjoy every bit of it!)
Ingredients 

  • Naan, store bought
  • Small Scallops, cooked- to place over naan
  • Pesto, store bought- 3 to 4 tbsp/ naan

Instruction

  • Pre heat oven to 400 F.
  • Pan fry the scallops with little olive oil or butter.
  • Place the naan over a baking sheet.
  • Smear the naan with pesto, about 3 to 4 tbsp or depending on your needs.
  • Place a few cooked scallops over it.
  • Bake in the oven for 5 minutes.
  • Remove from the oven and indulge in it.

Tips:

  • Seriously, you don’t have to add the cooked scallops, even the naan with pesto tasted unbelievably delicious.
  • You could even add cooked chicken or beef instead of scallops.
  • Vegetarians: add green pepper.
