I’d thought why would someone slice a nice looking omelette into bite size pieces and turn into a curry??? Now, I know the reason: because it tastes delicious. If you are tired of having omelette and looking for a way to make exciting dishes with egg, you gotta try this one.

Trying this dish had been in my to-do list for so long, finally prepared it yesterday and felt so glad that I made it. This dish tasted extremely delicious. Even, my Man loved it to the core as it tasted more like a meat dish.

I made a creamy and rich gravy with coconut milk and almond, added the omelette pieces to it and cooked for a few minutes. Absolutely delicious dish with egg omelette.

Egg- Omelette Korma Curry

For making Omelette
  • Egg- 3
  • Onion, chopped small- 1
  • Red pepper, chopped small- ½ of one small red pepper
  • Green pepper, chopped small- ½ of one small green pepper
  • Green chilies, chopped- 1
  • Ground pepper- ⅛ tsp
  • Salt- a few pinches
To grind to a paste
  • Thick Coconut milk- ¼ cup
  • Almond, blanched and chopped- 3 tbsp
For making gravy
  • Oil- 1 tbsp
  • Whole cardamom- 1
  • Whole clove-1
  • Bay leaf-1
  • Onion, chopped- 2
  • Ginger-garlic paste- ½ tbsp
  • Tomato, chopped- 1
  • Chili powder- 1 tsp
  • Turmeric powder- ¼ tsp
  • Coriander powder- 1½ tsp
  • Fennel powder- 1 tsp
  • Garam masala- 1 tsp
  • Ground pepper- ¼ tsp
  • Salt- to taste
  • Coconut milk- ½ cup
  • Cilantro, chopped- 2 handfuls
  1. In a bowl, combine all the ingredients to make the omelette.
  2. Place a non-stick pan over medium heat, add 1 tbsp oil and spread it on the pan.
  3. Pour the egg mixture and spread it evenly, let the bottom side cook well, gently flip it over and cook the other side as well.
  4. Let the omelette cool down, cut into squares and keep aside.
  5. In a blender, grind coconut milk and almonds to a smooth paste. Keep aside.
  6. Place a wok or pan over medium heat, add oil.
  7. Add cardamom, clove and bay leaf, saute for a few seconds till aromatic.
  8. Add onions, season with salt and cook till translucent.
  9. Add ginger-garlic paste, cook till onions turn golden brown in color.
  10. Add chopped tomato, cook covered till it's mashed up.
  11. Add chili powder, turmeric powder, coriander powder, fennel powder and garam masala. Combine well and saute for a minute.
  12. Add the almond-coconut milk paste, combine well.
  13. Add the rest of the coconut milk, season with ground pepper and more salt if needed, combine well.
  14. Let the coconut milk come to a slight boil.
  15. Add the omelette squares to the gravy, gently combine to the gravy and let cook for a couple of minutes till the gravy thickens.
  16. If the gravy is too thick add ¼ cup water to thin it down and cook for a couple of minutes
  17. Sprinkle cilantro over the gravy, cook for a few seconds.
  18. Remove the pan from the heat and keep covered for a few minutes.
  19. Serve this delicious omelette korma curry with roti, naan, chapati, appam etc
Add any kind of veggies to the egg.

You could replace almonds with cashew nuts.
