Grilled Chicken Drumsticks with Homemade Cilantro Marinade

Ingredients
  • Chicken Drumsticks- 10
Making cilantro marinade
  • Onion, chopped- 1
  • Ginger, chopped- 2 inch slice
  • Green chilies- 2
  • Cilantro, chopped- 1 cup
  • Curry leaves- 3 stalks
  • Salt- 1½ tsp
  • Ground black pepper- ¼ tsp
  • Water- ¼ cup
While grilling
  • Olive oil or vegetable oil- for coating
  • Lemon juice- to drizzle on grilled drumsticks
Instructions
  1. To a blender jar, add all the ingredients for making the marinade & grind it to a smooth thick paste.
  2. You could use skin-on drumsticks or skinless.
  3. In a large bowl, spread the marinade over the drumsticks, let marinate for 30 minutes or longer.
  4. Or marinate the drumsticks in the refrigerator overnight.
  5. Have the grill ready, grease the grill with non-stick cooking spray, place the drumsticks on the grill, and grill them covered at medium-high heat.
  6. Brush the drumsticks with olive oil, flip them over and grill till they turn golden brown.
  7. Drizzle lemon juice, grill for a couple more minutes, and remove it from the grill.
  8. Ensure not to grill the drumsticks till they turn dry, should be juicy inside and crispy outside.
  9. While serving, you could wrap the end of the drumsticks with aluminum foil so that it will be easy to hold.
Making the dipping sauce
  1. After the drumsticks are taken out of the marinade, there will be some marinade left in the bowl.
  2. Pour the marinade into a saucepan, add ¼ cup water, and cook over medium heat for a few minutes till the sauce gets thickened & starts to turn light golden in color.
  3. Serve the sauce in a small bowl & dip the grilled cilantro drumsticks in the sauce & enjoy.
How to Bake the drumsticks
  1. Preheat the oven to 400 F.
  2. Line a baking sheet with aluminum foil, and grease with non-stick cooking spray.
  3. Arrange the marinated drumsticks on the aluminum foil.
  4. Spray some non-stick cooking spray over the drumsticks.
  5. Bake for 35 minutes, flip them over after 15 minutes & bake for another 15 more minutes.
  6. Towards the end, drizzle lemon juice over the baked drumsticks and bake for a couple more minutes.
Pan-frying
  1. Place a skillet over medium heat, and add ¼ cup olive oil or vegetable oil.
  2. Place the drumsticks over the oil without crowding and pan fry till they turn golden brown in color, flipping it over occasionally.
  3. Towards the end of frying, drizzle lemon juice over the drumsticks & pan fry for a few more minutes.
  4. Serve hot along with the cilantro sauce.
