Easy Gluten Free Almond Honey Cake

Ingredients
  • Ground almonds- 1¼ cups (us ground almonds or grind 1 cup toasted whole almonds into fine powder)
  • Honey, not too thick one- ⅓ cup
  • Salt- ¼ tsp
  • Egg white, at room temperature- of 3 eggs
  • Raisins- 2 tbsp
  • Sliced almonds, to top the batter- ¼ cup (optional)
Instructions
  1. Preheat oven to 350F or 175C.
  2. If you have ground almonds use 1¼ cups of that or grind about 1 cup of toasted whole almonds with or without the skin.
  3. Using a fork, combine ground almonds with honey till it becomes a thick paste.
  4. Using an electric hand mixer, beat the egg whites with salt till it forms soft peaks.
  5. Gently fold the egg whites into the ground almond-honey mixture, combine well without any lumps.
  6. Add the raisins into the batter.
  7. Grease or line a square pan with parchment paper.
  8. Spread the batter evenly into the pan.
  9. Top the batter with the sliced almonds.
  10. Bake for 25 minutes, till the cake turns golden brown and a fork or toothpick inserted into the center of the cake comes out clean.
  11. Let the cake cool down for 5 minutes.
  12. Using a sharp knife, cut into desired shapes and serve.
