Kaipola or Steamed plantain cake

Ingredients
  • Plantain, ripe-2, diced small
  • Eggs- 3 or 4
  • Sugar, white or brown- ¼ cup
  • Cardamom powder-1/2 tsp
  • Raisins- 1 tbsp
  • Cashew nuts, chopped- 10
  • Ghee/butter-1 tbsp
  • Oil- for shallow frying
For Garnish:
  • Raisins, roasted in ½ tsp ghee- ½ tbsp
  • Cashew nuts roasted in ½ tsp ghee- 5
Instructions
  1. Half the plantains lengthwise & dice them up.
  2. Shallow fry the plantains in oil until golden brown and keep aside on a plate.
  3. Take a medium sized heat proof glass bowl, grease the inside with 1 tbsp ghee, don't skip this.
  4. To a large bowl, crack 3 to 4 eggs & beat well using a whisk.
  5. Add sugar, cardamom powder, raisins, cashew nuts-roughly chop the nuts.
  6. Add the fried plantains to the egg mixture.
  7. Pour the mixture into the bowl.
  8. Steam cook this for 20 to 25 minutes or till a fork inserted into the center comes out clean.
How to steam cook
  1. If you don't have a steamer, don't worry, follow this method.
  2. Use a large wide saucepan, fill ¼th of the pan with water.
  3. Cover the top of the glass bowl in which the plantain mixture is taken tightly with aluminum foil.
  4. Place the glass bowl into the water in the pan, cover the pan with its lid.
  5. Place the pan over medium heat and steam cook for 20 to 25 minutes, until the egg has cooked well and gets fluffy.
  6. After it has cooked, take the bowl from the water bath and let cool down.
  7. Run a knife along the side of the plantain cake in the bowl.
  8. Cover the bowl with a plate and turn it upside down, the cake would fall nicely onto the plate.
  9. Garnish the cake with roasted raisins and cashew nuts.
  10. Cut into wedges & enjoy.
Notes
Don't forget to grease the bowl, otherwise the kaipola will be stuck to the bottom of the bowl.
