Ingredients
For making Shrimp Stuffing
  • Marinate Shrimp
  • Shrimp- 15 (if large, half the shrimp)
  • Chili powder- 1½ tsp
  • Turmeric powder- ¼ tsp
  • Fennel powder- 1 tsp (optional)
  • Coriander powder- 2 tsp
  • Garam Masala- ¾ tsp
  • Salt- 1 tsp
  • Making Shrimp Roast
  • Coconut Oil- 2 tbsp
  • Onion, chopped- 4
  • Ginger- Garlic paste- 1 tbsp
  • Curry leaves- 1 sprig
  • Tomatoes, chopped- 2
  • Salt- 1 tsp
  • Cilantro, chopped- ¼ cup
For making Puttu
  • Puttu rice flour- 1½ cups (Double horse brand)
  • Water- 1¼ cups
  • Salt- ¼ tsp
  • Grated coconut- ½ cup
Instructions
  1. Firstly, let's make the shrimp roast.
  2. In a bowl, combine shrimp with all the spices mentioned for marinating shrimp. Keep it aside.
  3. Place a saucepan over medium heat, add oil.
  4. Add chopped onions, season with 1 tsp salt.
  5. Saute for a few minutes.
  6. Add ginger-garlic paste, and curry leaves saute till onions turn golden brown.
  7. Add tomatoes, cook till mashed up.
  8. Add the marinated shrimp.
  9. Cook covered till shrimp has cooked well.
  10. Open the lid, stir fry over high heat till all the liquid has dried off & the roast turns slightly dry.
  11. Taste and add more salt if required.
  12. Add chopped cilantro, combine well,
  13. Take the pan off the heat and keep it covered.
Making Puttu
  1. I used store bought rice flour or puttu podi that's exclusively for making puttu- Double Horse brand puttu flour.
  2. This flour is a bit grainy and should be soaked in water for 15 minutes. Follow the directions given on the back of the packet.
  3. Into a bowl, add 1½ cups flour, 1¼ cups water & salt; let soak for 15 minutes.
  4. After 15 minutes, the flour will absorb all the water.
  5. Using your clean hand, mix the flour well without any lumps, flour will be very soft.
  6. Note If you are using regular rice flour, flour shouldn't be soaked in water. Add water little by little and wet the flour by mixing with your hand till flour is slightly wet.
  7. If you are using any other Puttu flour brand, read the puttu making direction on the back of the packet and follow that.
Making Shrimp Stuffed Puttu
  1. I've the puttu maker or the mould that can be kept on the whistle hole of a pressure cooker to steam cook.
  2. Into the puttu maker, place the disc that comes with the puttu maker at the bottom.
  3. Spread 1 tbsp grated coconut.
  4. On top of coconut, spread 1 handful of the puttu flour.
  5. On top of the flour, evenly spread 2 tbsp shrimp roast.
  6. Again, spread flour on top of the shrimp roast.
  7. As the topmost layer, spread grated coconut.
  8. Do not compress the flour down into the puttu maker. Spread it loosely.
  9. Close the puttu maker with its lid.
  10. Add 2 cups water into a pressure cooker.
  11. Close the cooker with the lid. Lid should have the sealing ring.
  12. Place cooker over medium heat and let steam release from the whistle hole.
  13. When steam releases from the whistle hole, place the puttu maker on it.
  14. Steam cook for 5 minutes till steam releases from all the holes on the puttu maker lid.
  15. Remove the puttu maker from the pressure cooker.
  16. Open the lid, on a plate flip over the puttu maker.
  17. Shrimp stuffed puttu will fall nicely on the plate in the shape of a dome.
  18. Enjoy along with pappadam or pickle. Yum!
