Plantain Scrambled Eggs- Healthy Breakfast

  • Ghee or Butter- 2 tbsp
  • Ripe Plantain, diced- 1
  • Eggs- 2
  • Almonds, chopped- 6
  • Agave syrup or sugar- 1 tbsp
  1. Use ripe plantain, dice them up.
  2. Place a non-stick pan over medium heat.
  3. Add ghee or butter.
  4. Add the diced plantain, stir fry and let turn golden brown in color.
  5. In a bowl, beat 2 eggs using a fork.
  6. Add the beaten eggs to the roasted plantain.
  7. Scramble eggs and cook for 2 minutes.
  8. Add chopped almonds and agave syrup or sugar.
  9. Combine well and stir fry for 2 minutes.
  10. Serve on a plate and enjoy.
