Beetroot Burfi- Indian Sweet

Ingredients
  • Ghee- 2 tbsp
  • Beetroot, grated- 1 cup
  • Coconut, grated- 1 cup
  • Sugar- ¾ cup to 1 cup
  • Cardamom powder- ½ tsp
  • Ghee- 1 tsp, to grease the plate
Instructions
  1. Place a non-stick pan over medium heat, add 2 tbsp ghee.
  2. Grate 1 beetroot in a food processor, don't add chopped beets, has to be grated.
  3. Add grated beetroot, combine well in ghee for 2 minutes.
  4. Add grated coconut, combine well and roast for 5 minutes till the raw smell of beetroot goes away.
  5. Add sugar, combine well till the sugar dissolves, keep stirring.
  6. Add cardamom powder, combine well.
  7. Cook and stir frequently till the mixture thickens, about 10 to 15 minutes.
  8. Grease a plate or small pan with ghee.
  9. Spread the beetroot burfi mixture evenly on the plate and smoothen the top.
  10. Let cool down for a few minutes, let the burfi set well.
  11. Using a sharp knife, cut into squares.
