Okra Masala in Yogurt Recipe

  • Oil- 2 tbsp
  • Mustard seeds- 1 tsp
  • Cumin seeds- 1 tsp
  • Whole dry red chili- 2
  • Curry leaves- 1 sprig
  • Tomatoes, chopped- 1
  • Okra, cut into 1 inch round- 15
  • Chili powder- 1 tsp
  • Turmeric powder- ⅛ tsp
  • Coriander powder- 1 tsp
  • Garam masala- ¾ tsp
  • Salt- to taste
  • Beaten yogurt- 1 cup
  1. Cut the okra into 1 inch rounds, keep aside.
  2. Place a non-stick pan over medium heat, add oil. Let it turn hot.
  3. Add mustards seeds, let it splutter.
  4. Add cumin seeds, dry red chili and curry leaves, saute for a second.
  5. Add chopped tomatoes, saute till slightly cooked.
  6. Add okra, saute till it's no longer sticky. If it's getting dry add 1 or 2 tbsp water and keep sautéing.
  7. Let the okra turn slightly browned.
  8. Add chili powder, turmeric powder, coriander powder, garam masala and enough salt. Combine well.
  9. Turn off the heat and keep the pan on the stove.
  10. Beat the yogurt well using a whisk. Add the beaten yogurt to the okra masala and combine well.
  11. Do not heat the yogurt, it will curdle.
  12. Taste and add more salt if needed.
  13. Once the yogurt has mixed well with the masala, remove the pan from the stove. Keep covered for a few minutes.
  14. Serve as a side dish along with rice or roti.
