Ingredients
Making Pan Fried Herb Chicken
For marinating Chicken
  • Chicken breasts- 2
  • Fresh Rosemary leaves- from 2 stalks
  • Fresh Thyme leaves- from 2 stalks
  • Grated lemon skin- 2 tsp
  • Whole black peppercorns- 1 tsp
  • Olive oil- 1½ tbsp (or use butter)
  • Salt- to taste
  • Ground pepper- to sprinkle over chicken
  • Olive oil or butter- 2 tbsp for pan frying
For making Red pepper-Walnuts couscous
  • Butter- 1 tbsp
  • Whole cardamoms-2
  • Whole cloves-2
  • Bay leaves-2
  • Onions, chopped thin and long- 1, large
  • Garlic, chopped- 2 cloves
  • Red pepper, chopped- 1
  • Walnuts, halved- ¼ cup
  • Chicken stock- 1½ cups
  • Couscous- 1¾ cups
  • Ground pepper- ½ tsp
  • Salt- a few pinches
Instructions
  1. In a mortar and pestle, smash the rosemary leaves, thyme leaves, grated lemon, pepper corns, salt and olive oil till it turns a coarse paste
  2. Spread the herb marinade over the chicken breasts and keep aside for 15 minutes or longer if you want.
  3. Melt butter or add olive oil to a wide non-stick pan.
  4. Sprinkle some ground pepper over the marinated chicken breasts.
  5. Place the marinated chicken breasts on the pan, cook covered till the water from the chicken has evaporated. Open the lid and brown the chicken on both sides.
  6. Transfer to a plate and keep aside.
  7. While the chicken is pan frying, prepare the couscous.
  8. Heat a saucepan over medium heat, add butter.
  9. Add whole cardamoms, cloves and bay leaves, saute for a few seconds.
  10. Add onions and salt, saute till onions turn translucent.
  11. Add garlic, saute till onions turn golden in color.
  12. Add red pepper and walnuts, cook till red pepper turns slightly tender.
  13. Add ground pepper, combine well.
  14. Add chicken stock, let it come to a rolling boil.
  15. Add couscous, combine well, cover the saucepan and remove the pan from the heat. Let the couscous stand covered for 5 minutes.
  16. After 5 minutes, using a fork combine the couscous well.
  17. While serving: Make a bed of couscous on a plate, place the pan fried herb chicken over it and serve. If you want you could even serve roasted or steamed veggies with this.
